DVD duplication replication - what’s the difference?

Once I learned the differences between cd duplication and dvd replication services I was then left scratching my head as to differences between DVD-5 and DVD-9.  *sigh* and such terms as bit rates, authoring, authoring bit rate etc.  All this barely scratched the surface of the subject of dvd cd duplication replication and I really wanted was to find out where to go and what to do to transfer data from a number of my videotapes to DVD.   

Anyway I did learn that the differences between DVD-5 and DVD-9 is  that while all replicated discs have two layers (layer 0 and layer 1), a DVD-5 has data only on layer 0 (up to 4.7 gigs), while the DVD-9 disc has data on both layers (up to 8.5 gigs)
